convince me why I need a 240mm kitchen knife

Sounds like you don't need convincing. You already set your mind on a 240 mm knife. I have two gyuto at home but still want more. My wife keep reminding me that I have two hands and don't need more than two. I have six razors and one face. It's a struggle not wanting to buy more stuff.
 
As has been said you must only satisfy yourself. My "one knife" would be a good 270 gyuto.
 
I have a Suisin Inox Western 240 Gyuto It was my intro into j-knives and was a great knife for the money.

There's some pretty neat stuff on that Korin site. I like regular Geta and single leg Geta trays. I might have to make some of those when I make my cutting board.
 
I have not seen a 240mm, my usual is the common or gardenplace 210mm, but I guess the question is does it feel right? My 8" (sorry, still Imperial) Henckel just fits my hand and is well-balanced. It would take a really good knife to replace that.
