Texas Red Chili Recipe

Sharing the "Red"...

So I went to get some gas today, down the street from my house, and while I was there I saw an older homeless man in the parking lot. Just sitting beside the dumpster, head in hands. Kinda tugged at my heart strings... It's kinda cold and windy today so I went home, heated up some Texas Red and fixed a bowl, with a bottle of water and a can of soda. Got some warm wool socks and a thermal undershirt. Packed it all in a grocery bag and went back to the gas station to give it to him.

The look on his face almost brought tears to me eyes. He was soooo happy! Warm bowl of the Red, some warm clothes, and the look of pure gratitude on his face.. Priceless.

Toasting the chilis and garlic. I don't know maybe 18 chilis this time round. 5 ancho and the rest were guajillo.

2 pounds of diced brisket point along with some ground beef for a texture bomb.

Chili paste is dark red chocolate color.

It's all in the pot and in the oven.

Finished with a big smile and pretty dang good chili. Not a tomato or bean in sight...the bean was in sight but I made sure he didn't jump in the pot.

...dang jumpin beans.

Thanks guys. It's a strong beef, chili and garlic flavor with a bit of heat from added cayenne and jalapeno.
