So as I'm getting into straight razor shaving I've read that you should keep your strop as taught as possible when stropping and with very light pressure. But some videos of old barbers strop with enough pressure to kind of bow the strop down. Basically the exact opposite. My dad who used to watch the old barbers shave said thats the way the ones he watch did as well. So whats the deal who's technique is better the barbers or the ones giving out advice?

Even if you keep the strop tight it still bows noticeably, and will bow more the more pressure you use. So the two techniques are probably the same thing only one is described from the point of view of the performer, the other from the point of view of an observer.
