We had our 4-H potluck last week. We signed up to bring two corned beef as well as cabbage. Two fit in the instant Pot and were done cooking in an hour and a half. I don’t like the cabbage over cooked so I cooked it separately with some of the beefy liquid. We didn’t come home with any leftovers.
Made another because my teenager wanted to make sandwiches with Hawaiian sweet rolls. Corned beef is pretty popular in Hawaii. We had sweet roll sandwiches there with corned beef or lingueca. The linguica ones are great for breakfast. He will make 4 or 6 little sliders in one sitting and ask what’s for dinner. He also likes hash with over easy eggs. Growing boys make groceries disappear.
