Corned Beef.....

When in Vegas and before it changed I use to have (at least 4-5 times) corned beef hash at The Barbary Coast Casino.

I'd be in Vegas for a couple of weeks and out of all the places for breakfast....corned beef hash/Barbary Coast.

Miss it........now it's The Cromwell....:001_unsur

My 6lb 5 oz brisket had been sitting out for an hour before I put it in the oven. From what I've read, 45 to 60 minutes per pound so I just put it in the oven, 275 degrees for the first 3 or so hours. I'll then drop it to 225 degrees for the remainder.

Mine is simmering, 207 on my thermometer. Got a few hours to go yet.

My brother it making cabbage and potatoes, gonna be good eats I think....

This is fun, will make more in the future.
 
The merriment has just begun. The corned beef will be coming out in about 15 minutes. Guess who has the green beer, it's not me!

Btw, I got the glass at the James Joyce Pub in Baltimore a few years ago. They personalized it with my name for free if I bought a Guinness... I get to go back there again for a conference in April. Looking forward to it!
