Chowder

Any chowder fans?

I've currently got a big pot of corn chowder simmering away on the stove. I love the stuff, which is good considering my wife won't touch the stuff. Much like Jay and his monster sized summer sausage, I'm going to be eating this stuff pretty much exclusively and non-stop for the next week or so...and no doubt a tear or two will be shed when it's all gone.

Sounds scrumptious, Cory.

I like a nice clam chowder, myself, although I rarely get the New England (white) variety other than when we are up in Vermont or Maine. Around here (NYC area), my preference is usually a good spicy bowl of Manhattan style (red), which, I'll bet, is heresy to the chowder purists, but nevertheless delicious.

:chef:

Manhattan Clam Chowder is an abomination against God, Nature, and the American way

I like a good New England or Rhode Island (clear broth)

A good corn or crab chowder is also great stuff.

That oughta be good for a few billion calories.

Clam chowder for me. But, despite being from New England, I prefer Manhattan and Rhode Island styles (also being lactose intolerant doesn't help the issue).

MMMMMM. With the falling temps around here, that sounds really great. I'm partial to chicken corn chowder and New England style clam chowder myself.

Let's just say my cream hand may have slipped when no one was looking. :whistling:

What a coincidence. I actually shredded up some rotisserie chicken and threw it in my bowl tonight. Awesome.

Did I mention I'm going to probably be eating this stuff exclusively for the next several days? Gotta mix it up.

Corn, clam or chicken I am a chowder fan. The thing that sells MY corn chowder is smoked paprika finely minced bacon. Now I'll have to toss a batch together tomorrow.

Ya see...you can just change "Manhattan" to "New England" and you'll have my sentiments exactly.

I think whoever, wherever, whyever, and however fish and cream/milk (even cheese) are combined it is an affront to all things natural! I will excuse those that like butter on their lobster and mayo (not really, but arguably, a dairy food in their tuna or tartar sauce ) on their fish fry.

Lobster Newburg or Thermador...both are a great way to ruin a perfectly delicious food.

Herring and cream sauce....why, pray tell, why?

Even the humble tuna melt irks me. If you want tuna, eat tuna...if you want grilled cheese then have a grilled cheese, but why both at the same time?

Now...seafood in tomato sauces, like Manhattan clam chowder, these are perfectly complimentary flavors.

8 gallons is a lot of slippage.

Conch Chowder, Crab Chowder, New England Calm, Quahog and Seafood Chowder anytime. As for the Corn Chowder and the Manhattan Clam chowder I feed it to the badgers.

L

Lo'Tek

I had the Seafood Chowder as an appetizer up at the Weathervane in New Hampshire one year, and it was awesome and filled me so I couldn't eat my meal. I looked & looked for a 100% home made recipe that didn't include "Cream of something soup" as a base. There was none to be found. I read recipes for other chowders, combined ingredients and cane up with a fich chow. that can compete with W.V. I have about twelve cups of Fumet from haddick, polack, & cod in my freezer and now I want to make some Chow.

Thank you for making me hungrier.
