I like the 1955 British film The Dam Busters

Fun fact. The original 1977 Star Wars final segment attacking the Death Star, was directly taken from the Dam Busters' sequences of the bombers low level runs to breach the dam walls, even down to some dialogue.

 
Airwolf was awesome - though I have no clue how it would hold up now.
Top Gun is a classic, as is Airplane. Then, of course, there was Hot Shots...
Space themed gets too vast with all the SciFi Space Operas out there. But if we stay a bit more realistic, there's The Right Stuff and Apollo 13 that are excellent.
 
"Dive bomber" 1941 Warner Brother's technicolor look at pre-WW2 U.S. Navy Aviation.

The story, and the acting have not aged well. The color film of the 1941 Navy just before Pearl Harbor is priceless.

Highlights include:

Pre-war high visibility yellow wings.
Grumman F3F biplane fighters (the predessor to the more famous F4F Wildcat).
Aerial shots of USS Enterprise. CV 6
Vindicator Dive Bombers (predessor to the Dauntless Dive Bomber).

Interesting facts:

While the movie was being shot, the Navy was preparing for the upcoming war. In the background, you can see many of the aircraft change from peacetime bright yellow wings and polished aluminum fuselage to sea grey camoflage.

The movie show TBD Torpedo Bombers from the Enterprise. Slightly more than one year later most of the aircrews in those planes would loose their lives at the Battle of Midway.

If you are a WW aviation buff, this is must see.

Top Gun.
12 O'Clock High with Gregory Peck.
Baa Baa Black Sheep with Robert Conrad.

But if we stay a bit more realistic, there's The Right Stuff and Apollo 13 that are excellent.

The Right Stuff was good, more so for the Chuck Yeager story line than the Astronaut one.
Youse guys have things pretty much covered. :)
