Single Bevel sharpening

When sharpening a single bevel knife....a burr will create on the non beveled side as you keep going. When I try to remove this burr I see the non sharpened side begin to polish as if a bevel was starting to shape. Is this avoidable? Maybe a felt pad or something to remove the burr instead of a stone?

Question is; how do you properly sharpen a single bevel knife?
 
I am new to sharpening knives, but I have some experience working with de-burring sharp edges on metal so that no one would be cut....

The challenge was always enough pressure to remove the burrs but not to create more on the other side.

A light touch with a sanding disc in my case worked well, and practice of course.

I think in your case, maybe a ceramic rod, felt pad sounds good, I have even heard of using the big pencil erasers, or something similar.
 
When you are finished, either use a sharpening steel, or a ceramic rod. This should remove these burrs. If you don't have either a few swipes at about a 45 degree angle on your stone will also work. Don't use too much pressure though if you use this method...Good luck.
 
Place the un-beveled edge flat against the stone and hone the entire face until the burr is removed. For example if you were sharpening a chisel you'd hone the edge with the bevel, then turn the chisel over and hold the bottom of the chisel flush against the stone and hone the entire bottom of the chisel to remove the burr. Supposedly you can remove the burr with a strop, but I've never found that very effective unless the burr is microscopic.
 
Get a good leather strop with some green compound on it.
