Aretha Frankensteins Insanely Great Pancakes!

The LOTH has a daughter that lives in Chattanooga and for Christmas last year she sent us a box of pancake mix from a local mill called "Aretha Frankensteins Insanely Great Pancake Mix". They're not lying, these are great buttermilk pancakes! Every trip to see the family in Tennessee results in a box or two coming back to Florida in our luggage.

Nice! You should try sourdough pancakes -

50g sourdough starter
125g AP flour
125ml water
1 egg
4 tbsp olive oil
3 tbsp sugar
1 tsp bicarbonate of soda / baking soda

Mix starter with flour and water and leave, covered, on a counter overnight. Add all additional ingredients just before cooking and add enough extra water to make a pourable batter. Try not to stir too much once the bicarb' has been mixed in. Cook as per usual, et voila
