What's Your Breakfast?

Heading out to cut down a Christmas tree with the wife and kids so this morning was a quick-n-dirty scrambled eggs with scallions, hard salami, smoky Gouda, and a sprinkle of parsley on top.

Most mornings I have a bowl of Quaker Oats topped with a generous dose of Tabasco chipotle sauce and a spoonful of Moroccan olive oil. Surprisingly tasty, and maybe even good for me.

I have been experimenting with different types of mushrooms available at our local Asian market. This week I picked up a package of Enoki mushrooms.

I decided to sauté them along with shallots and some mixed spices/smoked salt and use them as the base for a French omelet -

You can see how nicely they browned in my Orgreenic skillet -

And of course a little splash of half & half in the eggs before whipping them ensures a rich a creamy center -

We had tacos last night and Mrs. Hippie made sure I made plenty of fresh tortillas.

Those turned into chilaquiles cooked on the kitchen woodstove this morning, with leek and green pepper.

Nice warm breakfast on a -15C morning...

Yesterday I made up a really nice hash of finely chopped potatoes, scallions, and pork sausage and lots of seasoning.

This accompanied two eggs over-easy on a bed of shallots, mushrooms, smoky Gouda and parsley.

Then this morning it was a less-elaborate stack of waffles with maple syrup and pecans.

As you can see, I am a real fan (some would say 'nut', pun intended) of close up macro photos.

Went quick and simple this morning. Homemade bread with a slathering of butter and Ireland's best - Folláin's blueberry - raspberry jam.

Now it's off to wrap presents while the wife and kids are out of the house.

This morning, a bowl of Mrs. Hippie's homemade granola on top of a baked apple, slathered in homemade yogurt. Large cup of coffee. Gave me the strength to stand up and get a lovely slant shave for the Winter Solstice.

This morning we had what has become something of a Christmas morning tradition - a gluten-free (oldest daughter has serious issues with wheat) 'casserole' of baked bread with apples and lots of cinnamon and other wintertime spices. Kinda comes out like a bread pudding but not quite.

Our traditional holiday breakfast, Icehouse Eggs — today's variation used coppa, gruyere, smoked cheddar, toasted croutons, and heavy cream, baked with a poached egg nested in the middle.

Followed by a luscious Royal Riviera pear.

Earlier this week I made an iron skillet dish with veggies, potato sticks and pork sausage that I topped with eggs and grated rosemary Asiago cheese. I covered it briefly with a teaspoon of water around the edge and they were "good to go", though I may have overdone it a bit with the butter -

This morning was an onion, peppers, and mushroom omelet with grated Gruyere. Of course, the bacon and homemade herb and parmesan toast were the icing on this breakfast 'cake'.
