Smoked salmon?

PM me you have any leftovers you don't want. I'll gladly take them. I'm a sucker for smoked fish.

Not true smoked salmon. I didn't do it on the smoker as you can see. I did it on the Weber kettle with charcoal and a pouch of wood chips. Ran it about 225 for 30-35 mins. On the weekend I would have done it on the smoker on grape or apple wood only and I would have run it at about 160-170 for 90+ mins.

I kind of figured from the OP, but it still looks really, really good.

Yea, an incredibly doable weekday meal...even more so if you did it on propane. The fish sits in the marinade (vermouth, soy sauce, brown sugar, ginger, garlic, scallion and hot pepper sauce...takes like 5 mins to make) and the wood chips in water while I set the rice cooker up (brown rice added 40 mins extra cooking time too) and stoked the coals. 30 mins later the grill is ready and the fish goes on. Steam the veg. while the fish and rice are cooking and if you timed it right the fish and the rice finish at the same time. I came in at 6:20pm and tabled this at 7:30.

Nice meal mate! There's nothing like a BBQ!

That looks way too healthy to be an indulgence -- awesomely delicious, no doubt, but still a little on the wholesome side (scotch excluded, of course).

Agreed...the indulgence was more in the method. How often do you find time to cook on coals, much less smoke, on a weekday?

I had 3 straight weeks on trial and finished up yesterday, so relaxed a bit and have today off. I am going to smoke a turkey breast tonight...maybe a cigar too!

Do it -- you are entitled!!!!

I just got a Weber charcoal grill a couple of weeks ago - have done some BBQ with chips (I use a small smoker box) and some low and slow chicken and sausages.

While the charcoal takes longer - its just a matter of planning, as the actual cooking time is about the same (you just need to factor in how long it takes to get the coals going and you can do other stuff while they do their thing.

The flavour difference over charcoal (especially with the wood chips) is amazing.

One way to keep things moist is to put a pan of water under whatever you're coking (as in on the charcoal grate - but not on the coals).

Nice glass, by the way. What's embedded in the base?

That is my favorite glass. I have 3 of them from a set of 4 that my parents were given as a wedding gift 55 years ago. It is a cocktail set from the period, the glass is only 3.5oz., and I have the pitcher and glass stirrer that went with it as well. The glasses are a bit clouded from years and years and years in the dishwasher, but they still hold up to daily use. It is an air bubble in the base, it takes on the color of your drink by refection. I emailed a picture of one to Replacements Ltd. and they had no information on it.

I have a set just like it.. love how the water runs out of the bottom bubble after you wash them up and want to put them away.:lol::rolleyes:

either you need a smaller plate or a bigger helping their bro!

That's a big plate. C.1950s as well, Kokuraware Bonaire...the dishes in my home as a kid. I filled out the set after my father died and we use them every now and then (when the dishwasher hasn't been run!) as daily dinner ware.

Do you have any info on the glasses? I would like to get some more. I will post a pic of the pitcher later.

The serving is about right for me. I had seconds on the rice but nothing else. I'm only 160lbs and trying for 155.

I was trying to come up with a response to that sentence, but virtually every concept contained in it is foreign to me!

Ahhh, sentimental value.. I see..
Well, I even went and took a pic of the glasses..
they are somewhat different, the shorter ones are different on the bottoms
with triangular hollows but the larger ones seem to be the same..
They are nice with a good heft to them. although they are fairly thin walled and I seem to remember the wife cutting her hand quite bad when hand washing one , one day years back..
I don't have much information though, only that we received them as one of our wedding gifts some 25 years ago.
no knowledge on the maker or identity... sorry
retro stuff is cool..
I like the classic stuff better myself as well :smile:

by the way..
one of my favorite choices for a meal as well..
