I made an oxtail soup last night and all I can say is that the flavor just blows my head off.
I made 10 cups of dashi stock, added soy sauce to flavor and simmered about a lb and a half of ox tail for four hours then added shiitakes shrooms and broccoli. It's so rich all I wanted to do was put my face in it and swallow. I didn't though...I would have burned my face.
