Oxtail soup

I made an oxtail soup last night and all I can say is that the flavor just blows my head off.

I made 10 cups of dashi stock, added soy sauce to flavor and simmered about a lb and a half of ox tail for four hours then added shiitakes shrooms and broccoli. It's so rich all I wanted to do was put my face in it and swallow. I didn't though...I would have burned my face.
 
Sounds like a pretty unconventional variation on the dish, I'd be tempted to try it if I liked mushrooms. I've cooked oxtail a few different ways and it's one of my favourite cuts of meat, but I've still not tried soup. In fact the only oxtail soup I've had was from a tin. Do you have to dilute the stock a lot? I can imagine with that much gelatin and collagen in the cut that it'd develop a pretty unpleasant consistency once it's cooled a little

It's a little gelatin-ish, but it heats up fine. I did it over two nights, allowing to cool so I could get the fat off easier. I wanted something with a lot of protein, fat, and meat for weight lifting days.
 
My grandmother used to make oxtail soup to that was 40 years ago and I still remember how good it was

On the other hand my mother used to make oxtail soup that would make me gag. Everything was thrown in, including the hide. Her split pea soup was the same way, but was bearable because of the hot dogs or ham. Decades later I love split pea soup, but won't touch oxtail with a 10-foot pole.
 
Had some menudo with oxtail the other day was out of this world good. Just a whole oxtail in the bowl, had to pick it myself. sooo good.

I like the OP way of doing it might have to make that soon. I see a trip to the Asian grocery this week.
 
I got two cups of it in a Chinese carry out container and it looks like meat jello with meat chunck and some veggie bits in it. Can't wait for lunch time. :D
