Pasteurs is probably all you need to know, but take a look at http://wiki.badgerandblade.com/Shopping by Country anyway.

CO Bigelow in the village is wonderful too. Perhaps its inventory pales in comparison to Pasteurs, but it is a beautiful and incredibly important shop all the same.
You don't need anything other than Pasteurs. If that shop does not satisfy you, it's time to find something else to get interested in
I could not believe how amazing Pasteur's was. You will not be disappointed.
Also note that Pasteur's has 2 locations:
1. 53 East 34th St., b/w Park and Madison ((212) 683-3838)
2. 806 Lexington Ave., b/w 62nd and 63rd ((212) 838-2500)
I live and work within walking distance of both stores. They are fantastic. However, I generally frequent the 34th Street location simply because there is more room to maneuver around the store.

Pasteur, Aedes De Venustas, Cambridge Chemists, CO Bigelow, The Bathroom, MiN, Osswald, Santa Maria Novella.....Those are pretty much my favorite shops. I'm a born and raised Manhattanite, 34 years.
