My first 3 layer cake.

It's my partner's birthday tomorrow.

She asked me to make her one of two cakes, this one and a Black Forest cake.

She wouldn't tell me what she wanted for her dinner, so I decided I was going to make both the cakes she asked for.

This one is a Confetti Birthday Cake.

Tomorrow I'll do the other one.

It's a white cake with suspended sprinkles with vanilla buttercream frosting.

For tomorrow's Black Forest cake.

There were no dark sweet cherries in syrup in the store. Only Maraschino cherries.
Her mom came through with some frozen dark sweet cherries, so, making the dark sweet cherry syrup tonight.

Cherries, sugar, vanilla and sugar anise.
Shall see what this looks like tomorrow.

Second 3 layer cake.

Homemade dark sweet cherry syrup.
For the coffee component, I made an Americano with Ethiopian beans, 20g in 42g out over 35s plus water to meet the 120ml.
Made the whip cream.

So far so good. It's in the fridge now setting the ganache.

My grandmother, mother and one of my sisters bake, so I grew up around it. But I never considered myself a baker per se.
Who'd have thunk that so much of it would stick over the years.
