Inside out (?!) omelette

This probably isn't an omelette and has some other name - just stumbled blindly into this method last week and have been making these every morning since.

Instead of putting the filling inside the omelette, I start by frying the mushrooms in olive oil and when they are browned enough I add chopped red peppers and green onions and bacon (I cook the bacon first then chop it) and pour the beaten eggs over the top. Add some cheddar cheese so the melted cheese will be on the inside and hit the top with a torch to melt the cheese and make sure the egg is set enough and fold it over. Cheesy goodness on the inside and browned mushroom, bacon etc. on the outside. Delicious with lots of Tabasco and fresh ground pepper.

I like to cut a slice of bacon with scissors,
first into long halves and then into small pieces.

When I think they're cooked the right amount,
I crack and fry two sunny side up eggs on them.
That sounds good too! Sunnyside up is how I usually do my eggs - but I'd just have regular strips of bacon on the side. I fell into this funny omelette method just because I had bought too many mushrooms and needed to find a way to use them up before they got too old.

Next time I do sunny side up I'll have to try cracking the eggs onto the bacon.

P.S. I do my bacon in a panini press between sheets of parchment paper (for easy cleanup) - it holds the bacon flat and cooks both sides at the same time -- really quick.

I do my bacon in a panini press between sheets of parchment paper (for easy cleanup)

I have used a cast iron skillet and a cast iron bacon press. Works pretty well. Cleanup is moderately simple as I like to save up the bacon grease to use for making refried beans.

Heh. I now recall my father once deciding before a family vacation that we needed a big batch of cookies to take with us. While Mum was the usual cookie baker in those years (before I took over that duty) she had something going and didn't want to play. (She was a professor; I suspect she had just given a midterm and needed to spend time marking.) So the Major decided that cookies were within his skillset and away we went.

Some kind of brown-sugar cookie as I recall. For the fat he went to the fridge and got out Mum's bacon grease can and used that. Well! He and I thought them quite tasty; Mum was horrified. She never let him make cookies again.
