"9" is a very wide gap, and consequently very aggressive. Conversely, "1'" is a very small blade gap, and very mild. A setting of "2' (nubie) or "3" is often considered a good starting point.

So how does the gap get adjusted? By moving the bar relative to the blade, or by adjusting the bend of the blade

On Fatboys there are four "posts" near the corners of the bottom plate. These move up and down to adjust the bend of the blade. As far as I am aware the doors do not move in relation to the guards.

You are correct about the four posts, but they don't adjust the bend of the blade. They adjust the blade gap by moving the blade bed up, and down. The actual arc of the blade (the bend of the blade as you call it) is caused by the TTO doors when they are tightened down, and thus the arc of the blade is unchanged throughout the entire process.
