4th of July Brisket

Great job on the brisket and the thread Brian!
I have done hi heat as well and the only thing I did different was start at a lower temp and work up to 300 or 325.

Are there any useful videos out there about trimming a brisket? I am a visual learner, and do better with videos over pics.
