I have done hi heat as well and the only thing I did different was start at a lower temp and work up to 300 or 325.

Are there any useful videos out there about trimming a brisket? I am a visual learner, and do better with videos over pics.

For trimming, really it's just about taking the hard fat off. That's pretty much all I did to the one above.
