Finnish Pancakes

In the city where I live, there is a very large population of Finnish people.
We actually lay claim to having the largest population of Finnish people outside of Scandanavia.

One of the best things that has come of that is Finnish Pancakes.
If you aren't sure what they are, they will remind you of a crepe. Very thin and very delicious.

Is there anyone else who likes these over regular pancakes?
I posted the recipe I use in the recipe thread, but here is is again if you are interested:

Finnish Pancakes
~~~~~~~~~~~~

2 beaten eggs
2 Tablespoons sugar
1 teaspoon salt
2 cups milk
1 1/2 cups sifted flour
1 Tablespoon melted butter.

Beat sugar, salt and eggs. Add milk and flour alternately to egg mixture.
Stir in butter.
Use a scant 1/4 cupful on hot griddle.

The griddle needs to be well oiled too.

And yes, I love Finnish pancakes - they also make great wraps for blintzes (I use either creamed cottage cheese or, if I'm feeling decadent, marscapone).

I didn't know they were called Finnish pancakes!
Anyhow, that is pretty much the exact same way we do pancakes over here.

For variation you can add an egg & take away a little flour.
Makes for a more "desserty" pancake, excellent with some chocolate sauce

I always finnish my pancakes if they have maple syrup on them. :001_wub:

I don't know if anyone who is Finnish just calls these pancakes. We call them Finnish pancakes because the Finn's introduced them to the area.
SWMBO likes them rolled up.
I've seen them served with strawberries and syrup.
I prefer them in a stack of about 4 with butter and a little syrup.

The called them just "pancakes" or actually "Pannukakku"
 
I love every type of pancake, these sound like another for the list.. now I want to make a twisty rolled up pannukakku benedict with some poached eggs, smoked salmon and hollandaise, maybe a caper or two, some dill... I am hungry
 
Ws as standard fare at Thursday lunch in Swedish military service for MANY years. Yellow peasoup with salted pork first, then pancakes with strawberry jam.

Buy cans of peasoup every time I'm back in Sweden and bring with me. Pancakes are not the same on their own ;)
 
Made these this morning. Very good. Nice alternative to "regular" pancakes.

And still very filling despite their thinness.

They're really just pancakes, atleast that's what they're called in Scandinavia... :001_tongu

Edit: That is to say, they're the same atleast in Finland, Sweden and Norway.
