Venison Jerky 2012

~20lbs of jerky mix marinading in the fridge currently. Getting excited to see how it turns out.

recipe:
20lbs ground venison (as much fat/grissle cut out as possible)
4tsp cure (botulism really sux)
3 cups Soy Sauce
48 oz Honey
4 tbs Dave's insanity Sauce

I'll let this marinade over night and put it in the dehydrator tomorrow night. I'm getting a new 1000 watt nesco hopefully it will be delivered by tomorrow. I have a smaller 750w nesco that works ok, i've used the bigger one before (my uncle has one) and it made the drying time a lot quicker, not to mention being able to get more in each batch.
This weekend will be a long one!!

Anyone else use a ground jerky mix? I'd love to do a whole meat jerky but all my good cuts of meat get used for stews and actual meals. So the 50 or so lbs of "grinder" meat I have, some goes to jerky.

I've never used ground, only sliced, but this simple marinade may work for a batch to see if you like it:

1 four ounce bottle of liquid smoke (I like Colgin's brand hickory)
2 teaspoons salt
1 teaspoon pepper
1 teaspoon garlic powder

I let the slices marinade overnight but you may want to use a shorter time on the ground. I use this for a pound, pound and a half of sliced sirloin, so adjust quantities to your amount.

My dehydrator is a pain to clean up, does a good job though, so I usually just put it in the oven as low as the temp. will go.
 
Jerky's almost done, First round is all done and the second and last batch are in the dehydrators. New dehydrator is nice got the batch done in almost half the time as the other one (6 hours vs. the past 10 hour deal)

Little more spicy than in the past, though I used pretty much the same recipe as in the past. Always interesting how it works out.

Every batch is different, huh? I sliced up some strip steak yesterday and marinaded it overnight, then chunked it in the oven this morning. Not done yet, but close.

Also made some corn dodgers in the dutch oven yesterday, so I'm set for snacks for a week or so.
