Praline Recipe

Been down in Louisiana for the past few weeks and spent some time to learn to make pralines from a colleagues wife. I can't get enough of this stuff and pecan season is upon us!

1 cup sugar
1 cup brown sugar
1 cup evaporated milk
1-teaspoon vanilla extract
1-heaping tablespoon butter
1-cup of crushed pecans

cook milk and sugars on low heat until 240 degrees (soft ball, use a candy thermometor) stirring constantly. remove from heat add vanilla, pecans & butter. stir( whip) with a heavy spoon until glossy sheen is gone.. spoon onto wax paper....should harden in 15 to 20 minutes. Fat free HAHA

NO DON'T CRUSH THE PECANS!

Saved you there. They're just not the same when they're crushed. My mom can cook them in the microwave, no thermometer. All by the colors (and fire alarm occasionally).

Serious, no crushing? Well my buddy is from northern Louisiana and you know those folks up there aren't as classy as the folks in southern Louisiana:lol::lol::lol: (I'm kidding)
 
Some of us in south Louisiana think Shreveport more a part of Texas than Louisiana. :lol::lol:

When my colleague in west Monroe said he was going to go show me some cows I thought some women but no....they were cows on a farm:lol::lol:

If you have good, slightly sweet pecans I wouldn't crush them. If they're dry little things might as well crush 'em!
