The chickens are laying so many eggs we can’t eat them fast enough. So today - Pickled eggs. Will have 4 quarts. Let sit for minimum 3 days then chow down.

That reminds me...I still have a couple of eggs in the brine in the fridge that I fixed a couple of weeks ago.
 
The British pub way was to crush up a bag of crisps (chips to you lot over the pond) then drop your pickled egg in and eat it covered in crisp crumbs!

I usually make them with malt vinegar so they end up brown!
