The chickens are laying so many eggs we can’t eat them fast enough. So today - Pickled eggs. Will have 4 quarts. Let sit for minimum 3 days then chow down.

Probably a few weeks I would think. They have never made it to a point where they were bad. Always get ate pretty quickly once they are “pickled”

Perfect snack to pair with a cold beer. The GF refuses to try them.

Can't say I have ever tried a pickled egg before. Pickled pigs feet, yes. I'll pass on those.

Being a vinegar brine, they will last a very long time. Months and months. The eggs only get better as they sit.
They are very good.
(Eggs, not feet).

That reminds me...I still have a couple of eggs in the brine in the fridge that I fixed a couple of weeks ago.
Back in the 1950s, there was always a big jug or two on the counter of my father's store. Some combination of Polish Sausage, Pickled Pigs' feet, and Pickled Eggs was always there. Loved 'em all.

I was charmed recently to discover my folks' new local has a jar on the bar, along with pickled cockles, and onions. Don't see them so often in pubs nowadays, though obviously still a staple at the chippy.
(And yeah - they can last a long old time).

I thought they were just a thing on bars in cartoons. 
The British pub way was to crush up a bag of crisps (chips to you lot over the pond) then drop your pickled egg in and eat it covered in crisp crumbs!
I usually make them with malt vinegar so they end up brown!
