Knot recommendations for cavalier restore

Hello I am thinking of doing my first brush restore and am looking for recommendations on which knot to use. So far I've got a bunch of razors, but only a few brushes. I currently have a Semogue 1305 boar and a vintage Thermos "Dachs Mit Borsten" that I like.

The brush I want to restore is the same Cavalier shown in this thread:

I'm interested in recommendations for a good all-around introduction to a nice badger brush. Maybe the type of brush that works for everybody and will give me a good feel for a quality badger. So what do you think?
 
Another +1 on the TGN finest, firm bristles with soft tips. Great build quality on the two knots i've gotten of theirs. I've got another restore to do and I'm not sure if i can pick anything but another finest.

Is there a recommendation on fan vs. bulb shape?

I am thinking of setting it at 48mm. Any concerns with that height? Thanks for helping me out, I really appreciate it.
