Midori Hamono

These knives are produced in Japan out VG10 stainless steel surrounded by a jacket of 15 layer stainless damascus cladding. The tsuchime (hammered) finish is hand applied when the blade is forged, then the bevels are thinly ground to expose the damascus layers and the core steel edge.

The laminated mahogany handles on these knives are nicely finished and have a warm feel to them, western style construction with triple riveting, and stainless bolster added for strength.

Available styles/sizes (ONLY 12 of each available!!!!!):

240mm (9 1/2") Gyuto (chef's knife) - Most common among advanced knife users

210mm (8 1/4") Gyuto (chef's knife) - Most common size purchased

180mm (7") Santoku (all purpose knife) - Most common knife

165mm (6 1/2") Nakiri (vegetable knife) - Sort of a short Chinese style cleaver

135mm (5 1/4") Petty (paring knife) - Long paring knife used on the cutting board

105mm (4") Petty (paring knife) - Short paring knife used (primarily) in the hand

*Note - These are hand made knives that may vary slightly in blade size.

Handle – Laminated mahogany (western style full tang & triple riveted)

These are absolutely gorgeous knives!


They are pretty good looking. Getting a nice looking knife with good steel, good grind, easy on the eyes, nice handle, AND with a decent price point was a challenge but I believe that we got a winner here. I like them enough that I'm giving these as Christmas gifts this year. They're the perfect upgrade for almost anyone that can be convinced to hand wash their knife and use a wood cutting board. :a6:
 
Those are a spectacular deal! We bought a set of Kanetsune and Tojiro Culinary blades in Tokyo a few years ago and spent about $600 more for virtually the same set - these are much better in the handle though over the traditional round Japanese handles, IMO! My wife is classically trained and used her set to compete in several culinary contests before we got married. A good knife in the kitchen makes food prep so much easier! Damascus holds its edge like nothing else, and is tough...I have seen her tear through an entire beef shank even breaking the distal femur for marrow with just her Chef Knife - Forgive me for not knowing what it's called...haha.
 
I forgot to mention this before....

If you want to do some comparison shopping (and who doesn't?) or maybe look for some reviews (always a good idea) search for "Kikuichi Warikomi Damascus Tsuchime Knives" as these are basically the same as the knives being sold here except the group buy knives have an upgraded handle.

C'mon James, don't let something as petty as "restraint" get in the way of a new knife!

Im trying to get ahead a bit for an upcoming trip, and a new pen and you know bills and what not,... but man these are pretty and shinny and well,... k I need to sign off now
