B&B membership has its percs
Since it's Mardis Gras, today I tried Jambalaya. I read a lot of recipes, from Joy of Cooking to Emerile's, and one struck me .. they said it is a do it yourself mismash of what you have around!
So, I did buy some Andouille Smoked Sausage (smoked by Dearborn, Mi Sausage Co), then got the CI pot out. Everything else was about here.
Roughly equal meats chicken, shrimp, sausage, smoked ham browned & set aside (shrimp cooked in Zatarains). Celery, peppers, onions in roughly equal amounts with 2 cloves fresh garlic minced into some leftover bacon grease .. browned some tomato paste with the trinity ... Then a can of diced tomatos .. after a 10 minute cook the rice, after 25 minutes the shrimp et al.
Wow/Huh, good stuff. My sons left with a big bag of it
