Jacques Pepin = Magic

I love French cooking, until I watch a French chef and he makes me feel like a fool for cooking chickens the wrong way :blink:

Wow...how to de-construct a chicken, LIKE A BOSS! Amazing that it only takes a few cuts to take it apart. Thanks for sharing!
 
As my buddy Jay always says about Pepin, he does everything in "real time" when he did a show. My favorite chef to watch on TV.
 
I used to like watching the shows that he would do with Julia Childs. Could never cook like that, but enjoyed watching them.

I have boned chicken hundreds of times, but never with the speed and efficiency of Jacques - I will watch this again with the laptop in the kitchen on Saturday
 
This is a great video, thanks for posting it.

Since we are going to the store today anyway and I am now planning on buying a chicken, this is definitely something that I am going to try soon, though I think my spinach will have noticeably more bacon in.
 
That is from the DVD that comes with Essential Pepin. It is a great book - he went back to all his published works and pulled essential or favorite recipes and updated them. It really covers a broad range of his work and makes it interesting to cook from the book.
 
Love watching the shows with him and Julia Childs. Quite a few times, they each showed cooking tips to the other's amazement.
 
I picked that up a few monthis ago and it really is almost as easy as he makes it. The cooked chicken and the presentation is excellent. I really like making the lollipop wings!

Jacques is a 'Master' because not only shows & teaches you to cook from raw product(s) to finished dishes; he also gives you the talk-through method of instruction. :thumbup:

How cool is it to watch a master of a craft at work? Pepin is very personable as well, and the instruction is concise.
That chicken didn't stand a chance.
You should see him do that at full speed. I have, in a working kitchen, and it's masterful.

Congrats, your trussing is more picturesque than mine ended up being. I damaged some of the skin near the drumsticks and it made the wrapping look a little less than perfect. The final product is great though, taste and presentation work well, the lollipop wings are a nice bonus:thumbup:

As I was doing my best to keep up with the video while it played in the background, discouragingly, I could swear he says something along the lines of "it should not take you much more than a minute to debone a chicken"! I don't doubt he could do it, but it will take a lot of chicken deboning before I can imagine doing that.
 
Jacques Pepin is a legend. I'd be interested in knowing how he shaves. He's definitely a perfectionist.
