I need a recommendation for a scent with leather and hay notes that does not get.

Hay is typically a sweet note anyway so finding a leather/hay frag that doesn't go sweet is going to be difficult. Not saying it doesn't exist just taht it's probably far and few between. My recommendation is Bois d'Ombrie, however, which is a leather/vetiver frag from Eau d'Italie. It's one of my favorites, actually. The leather is kinda suede and the vetiver is not overly earthy or smoky so the whole has a fairly dry and muted grassy note with suede leather - fantastic, get a sample!

I don't know about hay. I'm not sure I know what that would small like in a frag. I'm not sure a leather/hay combo exists. You may try:

Odori Cuoio - Soapy, clean leather
Dior Leather Oud - Oud (wood chips) + Leather. Has some civet for the skank aspect. It has a touch of honey to keep it from being completely dry, but I wouldn't call it sweet.
SMN Peau d'Espagne. The most herbal leather out there. Definitely not sweet. I'll not spoil the reminiscence of the top notes for you...

Tehtimmeh - Carner Barcelona Cuirs is my soapy leather scent (perhaps I should layer with something but I worry about too much scent). The SMN has peaked my interest.

SMN Peau d'Espagne is really a great scent. Carré d'As isn't sweet. Good luck finding that scent you're looking for. You may have to consider some kind of scent combination, that can sometimes turn out good.
 
Does Givenchy Gentlemen fit this description? I am no leather expert, so it is just a suggestion. I know it smells like leather, and it does not get sweet. I don't know about any "hay" notes in it though.
 
Around here this time of year the perfect name for a Leather and Hay scent would be 'Feedlot'. None of the locals would buy it though because they already smell like it.

(My lame attempt at humor in southern Iowa where a couple hundred cows live across the road eating grass during the warmer seasons and are eating hay in their feedlot now.)
 
There's a lack of fragrances with the "fermented corn silage" note. An interesting smell, especially after a long sit in a concrete silo.
