How much do I need to take out?

I just started working on my first brush restore - my grandfather's Ever-Ready. I've cleared out all of the hairs, but it isn't nearly as clear as many I see here. Is there any reason why I'd need to take out all of the black stuff (old glue?)?

Right now, it seems like a perfect platform for the new knot.

(the knot is actually perfectly level, it is just a little flattened from sitting in an envelope for a few months)
 
The old glue should be removed to provide your new epoxy a clean surface to adhere to the handle. In addition you will want to measure the loft to find out what length it is above the top of the handle in mm so that you can compare to others before determining to make the hole deeper to shorten the loft or leave as is.

It seems like the epoxy will adhere better to the heavily scored old glue than to the smooth rubber of the rest of the handle.

The current loft is about 51mm. It is a 20mm silvertip from The Golden Nib. After looking around at some discussions, I might try to drop it a couple of mm and aim for a 49mm loft.

I agree. Just a bit deeper. Great handle and an added bonus that it was your grandfather's brush!
 
As a general rule, I try to remove all the old glue. I just don't trust the stuff to provide a secure base for the new knot. It's easy enough to build a new shelf once you determine what kind of loft you'd like.
