Funny you mention your mom's chipped beef on toast because I was thinking about meals my mother made that I liked and this popped into my head. It's really easy to make, melt a Tblsp. of butter over med heat, add Tblsp of flour, pinch of salt and some ground pepper and cook a until lightly browned. Then slowly add a cup of milk. Bring it up to boil for about a minute or until thickened. Then I added a can of tuna until heated through. That's it. You can add peas if you wish but I hate peas.

My mother, a daughter of the Great Depression loved some of those old comfort foods.
Fried Bologna sandwiches, fried spam and a quick supper of equal parts graham crackers and saltines, crumbled with milk added. A poor man's ice cream soda was a glass half filled with milk and root beer poured on top before adding vanilla ice cream.
The chipped beef was always served with canned peas. I haven't had canned peas or chipped beef since the 1970's, but may five it a whirl some day. I always imagined that the canned green peas were left over from World War I.
