Ceremonial-Grade Matcha - how it's made

I believe there are a few matcha drinkers on the forum. I found this video about matcha production to be interesting. While it is not so different from regular tea growing it was a nice story and overview. (It is another Business Insider production.) While I might assume that best quality matcha has a short-ish shelf like green tea, I don't think that aspect was discussed.

Friend has a Japanese wife and gave me tips on stuff to buy at the oriental grocery; tried a good matcha once and really liked it.

She was also very specific on "which rice in America," not surprisingly.

I also like a good matcha. I don't drink it regularly or often, but I get on a kick every now and then. I'll buy a few ounces of very good matcha and savor it while it lasts.
