Cabbage and potato alternatives

So now that the corned beef is about to come out of the brine (1st time doing it myself, fingers crossed!), the missus informs me that she'd like different sides than the steamed cabbage w/butter and malt vinegar and the potatoes boiled in the corned beef cooking water that I normally serve alongside the corned beef.

I'm wondering what you all serve with your Corned Beef on this most American of Irish holidays...
 
I still just prefer to make awesome sandwiches with the corned beef. My wife likes to make mashed potatoes with it. I guess we do a traditional "Sunday" meal with corned beef instead of turkey or ham.

Put the cabbage and potatoes together to make colcannon. Better than either one alone, IMO.
 
My thought on this is to get something similar in flavor profile to what you are replacing. I don't think you want anything sweet, since corned beef has a certain sweetness to it. Cabbage is bitter(ish). Something else in the cabbage family would be good -- cauliflower or broccoli, brussels sprouts, radicchio would be fine (but it's red), mustard greens. For the potato substitute, rice is the obvious choice, but any starchy grain would do. I don't think noodles go well with corned beef. Grits would be ok, if your wife likes that. If you wanna get fancy, plantains or Jerusalem artichokes (they'll make you fart though), water chestnuts.
 
What is this corned beef you all talk about? The only corned beef I've seen in the uk is the tinned stuff full of fat! Doesn't sound like the same thing to me.

Aside from that, Colcannon is great stuff. Similar to our bubble and squeak!

I think a part my corned beef will form a part of Jiggs dinner. Pretty much the Newfoundland (and what were called the Boston States) take on corned beef and cabbage. Maybe I'll do some figgy duff as well.

Traditional sides include Peas pudding (yellow split peas boiled in cheese cloth along with the meat), Potatoes, Cabbage, Carrots, Parsnips, Turnips, Onions, Beats, and Brussel sprouts. Served with gravy and horseradish. I've got a bit of horseradish root so I can make it as hot as I want.

Figgy duff is pretty much a sweet dumpling like pudding done up in a pudding bag and boiled. Raisins instead of figs, cinnamon, allspice, ginger, molasses, and brown sugar added to a bit of flour and baking soda.
