I'm still learning how to shave, so I thought I'd make a positive contribution to the boards in another area. I'm by no means a chef, but these are so easy any idiot can make them. I've made them twice now and no issues. BLT Steak in Atlanta serves them as bread before a meal, but I make them for breakfast. BLT Steak helpfully provides the recipe when you eat there. The pictures are with a halfed recipe made in muffin tins, so plan accordingly.
Makes 12
Ingredients
4 cups milk, warmed
8 eggs
4 cups flour
1.5 heaping tbsp salt
2.25 cups grated gruyere cheese (don't use smoked-the flavor will overwhelm)
Popover pan (again, I use muffin pans and they turn out fine)
Prep
Place pans in the oven. Turn oven to 350 degrees.
Gently warm milk over low heat and set aside.
Whisk eggs until frothy and slowly whisk in milk so as not to cook the eggs. (I use a cheap milk frother for this-not one that uses steam, but one you get in cheap hot chocolate kits from Target)
Set mixture aside.
Sift flour with the salt.
Slowly combine the two mixture until mostly smooth.
Once combined, remove the pans from the oven and spray with nonstick cooking spray. (The first time I tried to do this part with oil and half my popover remained in the pan. I used the spray this time and they all popped out.)
While batter is still above room temp, fill each popover cup .75 full. Top each popover with 2.5 tbsp of cheese. Bake at 350 for 15 minutes, rotate, cook for an additional 35 minutes. Remove and serve immediately.
At BLT, they serve these with spreading butter and sea salt. For the ones I made this morning, I substituted cheddar for the cheese, and they still turned out great.
