Basic pancake recipe

This is just a basic pancake recipe that I tend to gravitate to on a Saturday morning:001_tt1:

2 cups a.p. flour
6 tbsp sugar
1 tsp baking powder
pinch of salt
1-2 tsp vanilla extract
2 eggs
1 cup milk
1/2 cup butter

Mix until incorparated. Let rest for 30 minutes (overnight is better)

When cooking, you can add your toppings when cake is soft set. My favorite is cinnamon sugar and bananas.

For a savory variety, half the sugar and add whole kernel corn, chopped green onion, and chopped bacon.
 
If you drop the sugar, baking powder, vanilla extract and the butter then it's much the same as mine.

Don't know what a cup of flour or milk is in normal weights and measures though!

No, it's in England as it says on my location! I am Welsh though. Moved to Cheltenham in Gloucestershire (which borders on Gwent in Wales) 31 years ago looking for work.

I do understand how your cup recipes work but almost all recipes in the UK and Europe I think use imperial or metric measures by weight. I even weigh the liquids such as water and milk as it saves using another container such as a measuring jug!

I have cheapo electronic scales which, on the press of a button, go back to zero ready for the next ingredient. Much simpler than having a pile of measuring cups to clean!

Must be more accurate than cups for dry weights as I could pack quite a bit of flour in a cup if I tap it down. Can't do that with weight.

1 egg
1 cup of flour
1 cup of milk
 
I have a sourdough pancake recipe in the B&B Cookbook. Create the starter, wait a couple days for it to work and then it's pancake time! Now that I have been reminded, I'm going to log off and go create the starter.
 
Thanks JP, I'll definitely check that out. I'll see if I can't do that conversion for you Galopede. I figured that was in England, I have a friend named Gareth over there (He goes by Gaz) thought it would be creepy cool if you were him lol
 
5 tablespoons of butter
1-1/4 cups flour
1 tablespoon sugar
1 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1 egg, separated
1 cup buttermilk
1/4 cup milk
canola oil for frying

Melt the butter and set aside to cool for a little bit.

Meanwhile, put the flour, sugar, baking powder and soda, and salt in a medium sized bowl and whisk to combine.

In another bowl, add the yolk from the egg and the buttermilk and the regular milk and whisk until well mixed. Add the butter and whisk.

Add the yolk and milk mixture to the flour mixture and stir until just barely combined. Add the egg white and keep stirring until a thick batter is formed. Do not over mix.

Heat a large skillet over medium heat and film with a neutral oil like canola. When the pan is hot, lower the flame a little and drop the batter by spoonfuls. The batter will spread. When bubbles break on the surface, peek underneath a pancake. It should be golden brown. If so, flip with a spatula and cook the other side.

Remove from the skillet when the second side is done and continue on with the remaining batter.
 
I cook in butter, so I don't want that much in the recipe, three teaspoons at the most.

350 g flour
3,1 dl. milk
2 small eggs or one big
Three teaspoons baking powder
One tablespoon sugar
One teaspoon maldon salt
Three tablespoons melted butter
