I agree, a very important book.

Once you know a bit of the science behind what you're doing in the kitchen, you're less likely to make mistakes, and more likely to make positive changes.
 
Your post reminds me that I have yet to pick this book up. As a biochemist and avid home cook, I think I'd love to nerd out on the food + science topic.
