A meal to bring to the office for sharing

I'm looking for an idea for something to make on a Sunday night to enjoy that night and bring leftovers to the office for some colleagues and myself for lunch the next day. I have done this before with lasagna and shepherds pie and a not so lunch cheese cake.

Ideas please.

Ham chunks or slices in potatoes au gratin. I cheat and use a boxed potato mix and add whatever pork product I have on hand.

I do a reuben cassorole sometimes for church pot luck dinners. I haven't used this recipe, but mine is similar.

Chili is always good this time of year. That reminds me that my office chili feed is coming up.
 
When I was working in an office environment, we had a "pot-luck" once every few months. I found the easiest thing I could fix to feed several, which I enjoy immensely myself, was pulled pork barbeque. Get a large Boston Butt and put in the slow cooker on low all day or overnight. Once cooked to proper temperature/texture, remove, drain liquid, and chop/pull the pork (removing any fat left over after cooking). Place chopped pork back into slow cooker and add your favorite sauce/seasonings. It's very simple, and if you like BBQ, it is a simple way to make a good amount with little effort beyond the chopping of the meat.

Wanting for wisdom
This is a favourite in my family. It is definitely one for garlic lovers. We call it May 24th or Chinese Salad. The cashews are fairly expensive but well worth it.

2 Cups Cooked rice
2 Cups Bean sprouts
3 Cups Chopped celery
½ Cup Shallots (I leave this out)
½ Cup Golden raisins
1 Cup Sliced white button mushrooms
½ Package Well washed Spinach sliced into strips (I remove the woody stems)
3 Sprigs Parsley
½ Cup Cashews

Dressing:
½ Cup Vegetable oil
¼ Cup Soya sauce
2 Cloves Crushed or minced garlic

Method:
You can make everything before the meal. I bring this to pot lucks by keeping the dressing in a glass jar and putting the rice, celery, raisins, mushrooms, in a plastic container covered by the spinach. Mix everything and the dressing about 1 ½ hour before serving.
