What is sharp? Who honed this blade? :

Not sure why this is impressive. Just about any sword of reasonable heft and an OK edge can do these tests, assuming it's not a blunt-edged concrete smasher at a renaissance festival. Most likely the edge was not super sharp for the demos in the video. They tend to use sharper swords when doing demo cutting with loose-rolled newspaper and other light targets that fall over easily.

Yes, demos like that are done quite often by Japanese and non-Japanese alike (I've done some of them too). Generally more about technique and hasuji than the sword itself, though it's obviously easier if the sword is sharp enough to slice paper (not an extreme standard), and there are specially made swords with a thinner cross section that sacrifice durability for easier cutting through thick targets.

No prob, the videos are awesome but I doubt there are many people in the world that can slice a pellet fired by an airsoft gun mid-air. Not only is it technique but the cutting ability of the sword has to be something special.
