No disrespect to yo mama but we are talkin' about somethin' dad would make. That's right... daddy. First things first, and that's bacon and chorizo. Mommas gone after I said that. Onion, poblano, garlic, jalapeno, and tomatillo...all roasted in a hot cast iron skillet. A little cumin, s and p, chopped up chipotle peppers with adobo sauce, cilantro stems, bay leaves and chicken broth. The beans were soaked over night in beer, water, s&p and a bit of sugar. I forgot to add the bourbon because I was drinking bourbon.

Looks great and I'd bet that the mashed up leftovers make a helluva good bean dip for tortilla chips or Fritos.
 
I make my beans almost the same way, but add some roasted pork bones, usually ribs. I'll have to try the tomatillos though, that's a great addition I've never thought of!

I bought some Northern white beans to try in this above recipe. Mainly because the wife likes them better then pintos.

Hatch chilies will be added.
