The Olive wood one is nicer imo; both finish and overall design. It's also about 30euro more.

I have a Shavemac in bruyere DO1, is gorgeous I also have a Dovo in olive wood, although beautiful, the bruyere is more so IMO

The Bruyere is a beautiful brush.

I think the olivewood is nicer looking (in the case of the two Shavemac's at question) but both are nice woods in general.
