Romertpof

Last night I had a nice roasted chicken that I had cooked in a Romertopf that Mom had bought years ago. It came out fantastic! Does anyone here have a favorite Romertopf recipe?

I had to do a google search to figure out what a Romertopf is. It's just a clay baking vessel right?

And I obviously don't have any specific recipes for it seeing as I didn't even know what it was.

What are the advantages to cooking in a clay pot vs a standard dutch oven?

Moisture. The clay used in these vessels is not sealed in any way. The first step in the cooking process is to soak the thing in water for about 15 minutes so that it absorbs water. Then load it up with food and put it into the oven. It's an ancient process that goes back to the times of the Romans, if not before.

I bought one about a year ago and have used it once for a vegetable stew.

These days it just gets used to let my orchids soak - not really what it was intended for but I too find it hard to find recipes meant for romertopfs.
