(relatively) healthy spinach dip recipe

I don't know how many of you have been to Houston's and tried their spinach artichoke dip, but I like it. It's not the most frou frou, and definitely not the healthiest, but tasty nonetheless.

While setting out to replicate their dip I found this link , and modified it a bit with what I had around the house, and in a way that I thought would be healthier. My measurements are fuzzy since I just eyeball everything, but here's roughly what I did:

Ingredients:

1 onion, diced (I used yellow)
2-3 cloves garlic, diced, then smashed/shmooshed/creamed
1 cup frozen spinach (Trader Joe's is what I used)
1/4 cup shredded cheese (mozarella, blend, whatever you have)
1/4 cup low fat cottage cheese (you can also use no-fat, or full-fat)
2 tsp shredded parmesan cheese
1/2 tsp shredded asiago cheese
1 egg

What I did:

1. Pre-heat saucepan (I used stainless) on medium flame.
2. Dash of olive oil, spread around.
3. Toss in the onions, stir fry until browned, 3-4 minutes, depending on heat.
4. Toss in smooshed garlic, stir for another minute.
5. Toss in spinach, stir for another 20 seconds.
6. Lower flame to "barely-on", toss in your cheeses, crack your egg into the pan, stir for a good 2 minutes. Use your judgement to decide when it's done. I took it off when all the cheese was melted, and at a small continuous bubble.
7. Stir in salt, pepper, hot pepper flakes (whatever you like) to taste.
8 (OPTIONAL). I have one of those immersion/hand blenders like this, and gave it a few pulses right in the pan. Not to the level of baby-food, but to get the onions and spinach smaller.

I then transferred it to a bowl and ate with crackers, and/or toast. It was delicious :001_smile

My wife is a fan of spinach dip and has wanted me to make a healthier version of what I make at work, I'll have to give this one a try. We add artichoke hearts to the spinach dip at work, which I really like.
 
Different type of spinach dip, but the recipe on the back of the Knorr Leek soup package is so good. Make it and put it in a bread bowl, then cut up another sourdough loaf into cubes and enjoy. Eating the empty bread bowl at the end is the best part.

Here it is:

MAKES 4 cups dip
PREP TIME: 10 Minute(s)
CHILL TIME: 2 Hour(s)
INGREDIENTS
1 package (10 oz.) baby spinach, chopped or 1 package (10 oz.) frozen chopped spinach, thawed and squeezed dry
1 container (16 oz.) sour cream
1 cup Hellmann's® or Best Foods® Real Mayonnaise
1 package Knorr® Vegetable recipe mix
1 can (8 oz.) water chestnuts, drained and chopped (optional)
3 green onions, chopped (optional)
PREPARATION

Combine all ingredients and chill about 2 hours. Serve with your favorite dippers to your favorite people.
