Question About Microsoft Excel

I figure (hope) someone here knows more about this than I do.

How do I stop text from one cell from spilling out of the cell and into the adjacent column? For instance, if I type in a really long link in cell A1, it spills into B1. I know there's a way to lock the cell, or something, so that it doesn't spill over. I've forgotten all my EXCELlent knowledge. (...)

Oh, I'm looking to format the entire document, so that this is typical of all of the cells, not just one.
 
If you highlight all the cells clicking on the cell on the far left above the 1 and to the left of the A, then under Format Cells - Alignment, check the Wrap Text option.
 
make cell longer like Jawa suggested ; that way you can keep all the row heights the same - looks smoother IMO .
 
When I did the wrap text, it made all of the cell heights much larger. Increasing the column width is problematic, because I've got some LONG links in there. I thought there was a way to, like, lock the cell, so that when you're viewing the document only part of the long text will show up in the cell (and not spill into the adjacent column), but if you click on the cell, the entire text will show up, either in the cell, or in the bar above the document...

Well if adding a space (or actual data) in the cell to the right doesn't suit you, you can always format the crowded cell to "shrink to fit".
Both methods stop the intrusive behaviour.

Edit> A better way: highlight all rows, set to to word wrap, then set all rows to a fixed height. This disables autofit.
