Mmmm Meatloaf

3lbs ground beef
2 carrots finely diced
1 green pepper finely diced
1 small onion finely diced
1/2 package wheat ritz crackers crushed finely
1 tsp minced garlic
4-5 dashes worchester sauce
1 egg
Salt and pepper to taste

Mix all ingredients thoroughly, shape loaf onto foil lined cookie sheet and bake at 400 for approx 90 minutes or until 160F.

1/2 way through the process one can add a ketchup/brown sugar (1/2c/2tbs) "glaze" if you like a bit of tanginess.

remember to let it rest for about 10-15 minutes before slicing.

Mmm pure comfort food goodness.
 
I have someone with a wheat allergy in my house, so I have to make mine gluten-free.

Pretty similar to recipe above. I grate my veggies instead of chop/mince. And in place of the crackers I use gluten-free bread soaked in milk. I also get this pre-done meat mix from my local store (beef, pork, veal).

To make it a little less greasy, I cook mine on a rimmed cookie sheet fitted with a metal cooling rack. The rack allows the grease to drip down onto the cookie sheet. Works great!

Meatloaf sammiches as the best. Mmmm. I know what I'm making tonight.

Fried meatloaf sandwiches are as good as cold meatloaf sandwiches.

Made a meatloaf last month using almost the same recipe as above (no carrots) and I bought a 3 lb value pack of hamburger. It tasted fine, but the meat included way too much chewy chunks - had a bit too rough of a texture. I won't cheap out next time.

What are the best side dishes for meatloaf?


Mashed potato?
Garlic Bread?

Yes! and canned corn too.

Last time, I piled canned potatoes around the meatloaf and cooked it that way. There is something different about a canned potato that I like - the roots of which I know are deep in my childhood and irrational. My daughter was less then enthused. She is a mashed potato girl all the way.
