What's new

In defense of Stinky Cheese.

I hit the stores today with a $20 in my pocket and no agenda.
While browsing the fine grocery mart known as Walmart (ugh) I splurged and bought myself some Limburger cheese.
I promptly brought it home and had a nip of some "cheesy comestibles".

Ahhh the smell of Limburger. Let's face it, it just stinks. Dirty diaper stink.
Strong, musky even a tad fecal. Is that hay I smell?

However, even though it stinks, it tastes very nice. Maybe even a little nutty.
I had it cold because it just came out of the cooler section but next time I'll let it come up to room temperature.

Don't fear the Limburger. It smells bad but it tastes wonderful.

Now while we're talking about stinky cheese, I'd be remiss if I didn't mention OKA cheese.
I don't know if you guys can find it, but if you have the chance pick up some OKA. It is stinky yes, but the taste is even more nutty than Limburger.
Nothing unpleasant about it at all.

Now I give you some pictures of my Limburger to stoke your fire. Raise a glass to Stinky Cheese!

Added bonus: I just found out that on the side of the package it says "Lactose Free". That's good.

I may have to try it again. I'm big into eating scary food - intestine, all kinds of offal, etc but when I tried Limburger (this one from Trader Joe's), I tapped out. Maybe it was just that brand or something. I totally get the smells bad/tastes great thing - like Durian. Yum!

...post!! You got me intrigued that I might even try some. Hmmm, now what else could I do with stink cheese? Melt a bit into Fondue? Cheese & fruit plate? Uh...help me here shaving chums with ideas /recipes!!!

However, one thought keeps recurring to me. How do you store and keep this cheese in your 'frig' without the stink 'infusing' into your other stables (wrap it up in foil, air-tight' container / baggie, ect...)?

How does it compare to "Brick Cheese"? I've had that, and gagged at the smell and taste. I'll eat Stilton or Maytag all day long; but I just can't stomach Brick Cheese...

It's not cheese, but there's a Chinese fruit called Darian, that is worse than Limburger. The first time I bought it I thought there was a gas leak. I couldn't even eat it.

The traditional way to eat Limburger is in a Limburger Sandwich. Rye bread, Limburger Cheese, Brown mustard and Onion. I don't know if there is an exact recipe or not. Limburger is great with rye bread or rye crackers. I always prefer wash-rind cheese at room temperature.

Stinky cheese from my experience doesn't typically have the taste associated with the smell. I suppose some does, but I haven't found that with the cheese that I've tried. It just so happens that the bacteria they wash the rind with makes the cheese develop a certain odor.

Today I will be having a grilled cheese sandwich made with Limburger. Hey why not?

As for storage, I put it in a ziplock baggie in the fridge. It's not that bad at all. But then, maybe my sniffer is used to it.

Cheese is a lot like pipe tobacco. What smells good does not necessarily taste good and vice versa. Stinky cheeses usually taste better to me. I have never tried Limburger cheese because of all the Three Stooges references. It was always depicted as wretch inducing so I avoided it. I guess I should try it.

Cheers, Todd

Thanx for your reply, update (a ziplock bag seems the way to go), and for sharing.

My local smelly cheese is Stinking Bishop made by an aquaintance of Mine, Charlie Martell. Most shops that have sold it have stopped because of complaints about the smell! If it was good enough for Wallace & Gromit then it's good enough for me.

Die Kase Stinkt Gut? It's funny, I was recently thinking about Limburger cheese as well. My Dad was telling stories of my German born Grandfather, and how he'd eat limburger sandwhiches as described above, on rye bread with onion and brown mustard. I realized that Iv'e never tasted it before. I recall laughing as a kid at the Three Stooges and Little Rascals, whenever there was a Limburger cheese scene, there seemed to be many.

Turns out there is only one American dairy still making Limburger cheese, its in Wisconsin. Apparently during the 1930's There was over Six Million pounds of the stinky stuff produced a year to meet demand, now slighty less than One Million pounds is more than enough. Sounds good with some brown bread, and a good Hefe- Weizen Bier.

Oh there is an American company? I'd like to try it.
To Google I go!

Sorry, forgot to list the name of the company. "Chalet cheese cooperative" doesn't seem to have a website for direct sales, only a retail store. Apparently any Limburger made in the U.S. comes from them, as they do private labels.

At one time, it was the most popular cheese in America. I must try it.
