Homemade Irish Cream?

Trying to dream up what to get friends as Christmas gifts and came up with the idea of homemade bottles of Irish Cream when I went liquor shopping for my wife's homemade chocolate truffles. I've seen some with egg and without, not sure which would be best. I was going to try this one I found on the intarwebz.


  • 1 cup heavy cream
  • 1 (14 ounce) can sweetened condensed milk
  • 1 – 1 2/3 cups Irish whiskey
  • 1/2 T espresso
  • 2 tablespoons chocolate syrup
  • 2 teaspoon vanilla extract

I picked up a case of 1L bottles w/ swing tops and will use Jamesons as the base. I might also try a "Cajun Cream" w/ Bourbon :biggrin1:

Anyone got their own winning recipe after years of trial and error that they'd be willing to share?

I have a couple of recipes that I'm going to try - my first time this year so I don't have any input yet - but one calls for almond extract and the other calls for coconut extract. Both call for eggs, though. Otherwise, they are similar to yours but have less (or no) heavy cream. I'm actually going to make mine this weekend so I'll be able to follow up soon. I'd like to hear more about yours when you get a chance if you end up making the recipe you described in the OP. You know, for comparions.
 
According to Bailey's webpage, there's no egg/egg product or nut/nut products in their Irish Cream. On the other hand, it's hard to say what else goes in during the production process. I'm looking forward to you guys trying out all of these recipes, then posting the winner!
 
We usually just search around for a good looking recipe when it's time. I'm not organized enough to keep track from year to year.
 
Made a test batch with the suggested 1c of whiskey. Flavor was good but too thick. Tried to then add the 2/3c and reblend. Curdled immediately :(

S'pose if I'd added all the whiskey at once it wouldn't have chunkafied? I'm keeping all the ingredients cool as suggested in the fridge. You guys dump it all in and blend or add ingredients in a certain manner?
 
Watched a few vids and everyone blends it very gently and adds the whiskey last. I think the Vitamix tried to make me a frappé... :p

So how'd it turn out? If I get time I'm going to attempt it again this weekend.
 
ok, 2nd attempt is a success :)

i just put the Vitamix on it's lowest setting let everything but the whiskey blend while I pulled an espresso shot, dumped that in, then poured the whiskey in gently

funneled into a 1L, perfect fit, just below the neck, capped and in the fridge to meld for some tasting tonight ;)

tasted a bit from the blender, very good, but honestly it seems pretty hard to go wrong with these ingredients lol
