Home Made Pasta Sauce

I'd like just a little braciole.

A good recipe for braciole:

  • 4 thin slices of veal
  • Finely chopped garlic (1 clove) & parsley
  • Finely chopped prosciutto or pancetta (2 slices)
  • 2/3 cup of shredded Romano cheese
  • 1/3 grated provolone cheese
  • Salt & pepper to taste
  • 1/2 cup of Italian breadcrumbs

Prep: In a bowl mix all of the ingredients. Lay out slices of veal and place a handful of the mixture in center.
Carefully lift one end of the veal and start rolling into itself like a cigar. With cooking twine, wrap each veal "cigar" tightly with mixture at center and set aside. Brown in olive oil.​
