Breakfast Tacos

leftovers rule!

~6 oz leftover ribeye, cut into 1" strips
1/2 cup leftover sauteed mushrooms
1/2 leftover baked potato, cut into homefries
2 eggs
1/2 cup jack cheese
dash of chili powder
hot sauce of choice, to taste (texas pete here!)

corn tortillas, warmed in pan

makes 6-8 tacos

I do mine with queso blanco, chorizo, eggs, frijoles refritos, and Cholula. Maybe we'll have some this week. Hmm...

BTW- it's traditional to use two corn tortillas for each taco.

I usually do mine with a corn tortilla, frijoles, guacamole, salsa, poached egg and a bit of cheese on top

Melt the cheese in the oven and serve

I'm usually good for a few hours before I have to eat again!

Then for lunch, 1 chorizo sliced, 1 potato diced, 1 jalapeno, roll in a tortillas! Love it!!
