Bigos-Polish Hunter's Stew-The Polish National Dish

Since weather's getting cooler and a lot of cooks are thinking about soups and stews and roasts, I'd like to be sure that everyone's acquainted with this dish, which has all the food groups most guys like. Its basically a sauerkraut / pork braise, with other stuff thrown in, and you'll be happy you checked it out--its hard to stop eating.

That looks pretty nice. From experience, too much booze in a recipe can kill it. This one has a lot... I always find that white wine was way better to cook something than red. Specially for sauerkraut...
 
That looks delicious but I shudder to think of the fat and caloric content of that dish.

I've had good hunters stew at a local international festival in St. Paul. It was the last year they had it and I've pined for it for years. I'd love to make it though I'd be the only one eating it from my family. (everyone hates sauerkraut except me)

You make a very good point, as I have made this dish many times, and find that the vodka takes a lot away from the raw flavor, while the wine adds to it, IMHO.

you're basically eating braised cabbage with some meat and stock thrown in, so I'd wager that the fat and caloric content is actually quite low, as long as you eat moderate portions of meat.
 
I've had this on my many trips to Poland.
It's a great dish.
Much nicer when eaten in a Bar Mleczny which is a milk bar (although mleczny is not the word for milk :huh:)
Most restaurants don't give it enough oomph.
 
I grew up in Poland, and have prepared bigos many times. This is a dumb recipe. It should have some sweet cabbage, not just sour. It should not have so much meat. Finally, the vodka at the end is an absurd affectation. I' ll try to find a better, traditional recipe.
