Apple Pie

One gallon of apple cider, one gallon apple juice, three cups of brown or white sugar and eight cinnamon sticks. Put all of this into a big pot and let it simmer for a little while on the stove. Shut down the burner and let it cool. Add a fifth of 190 proof Everclear, then pour into 1 quart Mason jars (should make about 9 quarts). Let it sit for a few days, then enjoy. Be careful, this stuff is strong!

I need to make some of this up with fall and winter around the corner, although I don't use as much cinnamon and add a half cup more sugar.

In college at a tailgating party someone gave us some of this....they told us its just Everclear and apple juice.
Well we thought it was great, and tried to make some by mixing half apple cider and half everclear...needless to say it turned out terrible and had disastrous results. Everclear is something I now avoid after taking shots of the stuff in college.

This drink is good though...I might have to make some.

Im def gonna have to try some of this. I'll be at the store tomorrow. I assume I could use Vodka if I did not want to use everclear?

Also, do you gents find much of a difference between the brown or white sugar. I would think the brown sugar would add an almost rum type flavor to it?

How long does this keep? Nine qts may take a little while to get through even with help.
Should keep for a long time. I run the jars through a cycle in the dishwasher right before I start making a batch so the jars are good and sterilized just in case, though. I actually make half batches, right at 4 and a half quarts. I've noticed as friends try it out, I go through a half batch pretty quick.

I'm sure you could use vodka in place of the everclear. I've only used the brown sugar, so I'm not sure what the difference would be. A friend of mine uses a combination of white, brown sugar and honey and I haven't noticed much difference in that and just the brown sugar.

I have had this before except the person had put shine instead of everclear. I thought it was great really smooth tasting, I wanted the recipe but of course they didn't want to give the recipe for it.

My favorite Apple Pie recipe:

2 gallons of apple cider
1 fifth Cap'n Morgan spiced rum
1 pint Hot Damn! Cinnamon schnapps
1 pint Apple Barrel apple schnapps
A pinch of nutmeg

Combine all liquid ingredients in a 3 gallon crock or stoneware jug, mix well, then add a pinch of nutmeg and cork loosely. May be consumed immediately or aged in a cool, dark place. (A root cellar is perfect!)

I usually make a batch as late in the fall as I can still get local cider and let it age until the following fall. Smoooooooooooth!

Thanks Bama
