1 lb of hamburger, what to make?

Okay. Not looking to be gourmet. Don't want burgers. Don't want tacos. But I'm cooking dinner tonight. Creative ideas?

Brown it, drain it, throw some shredded potatoes and chopped onions in. Add a little salt and black pepper, and you have a nice dinner skillet (p.m. version of a breakfast skillet).
 
1 pound of hamburger................umm, hamburgers? You can get creative with the toppings. I enjoy bacon and some avocado or a fried egg, Taylor's ham, and aged cheddar.
 
Mix in an egg, bread crumbs, some seasonings like salt, pepper, oregano

Squash in a bake pan, bake it or fry it in a skillet

Put on some ciabatta bread (or any bread) with marinara sauce

I'm still open to suggestion, but I think we have a winner. Nice and cool evening, this is a takeoff of my favorite Hamburger Helper dish, Cheesy Hash Browns. I think this sounds perfect, with a little cheese tossed in! Thanks for all of the great suggestions!

As a Scottish descendent, I would be remiss if I did not vote for Mince and Tatties, as told in the famous poem,

I dinna like hail tatties
Pit oan my plate o mince
For when I tak my denner
I eat them baith at yince

Sae mash and mix the tatties
Wi mince into the mashin,
And sic a tasty denner
Will aye be voted “Smashin!”

My mom made this for us more times than I can recall. At the time, I didn't realize it was because she was exhausted and cheap.

I had a similar situation tonight. Some ground beef and no plans. I browned the meat with a bit of seasoning (salt, pepper, garlic, onion powder, and some other random stuff), tossed in a pile of diced mushrooms, a can of diced tomatoes, some chilis, let it simmer for a while, topped with cheese and served it up. Very simple and easy. Not really chili, but had great flavor and the kids and I loved it.
 
If you like carbs - Mac N Cheese is darn good w beef. Whether it's Kraft or full home made, awesome.

Ding ding ding....

Lately "modified mac and cheese" is what I have been doing with ground beef.

Beef browned with onion, bell pepper, grated carrot, celery, and garlic. Add in a can of beans (yea a regular can of beans, make sure you rinse them). Pinto, black, navy, does not matter. Include a can of diced tomatoes and some basil, salt and pepper.

Add all of that to your mac and cheese. Killer easy and surprisingly tasty.

As suggested, boxed or specialty cheese mac and cheese is fine. Like you said, gourmet it is not

Maybe do up a meatloaf that you can work some veggies into; top if with a spiced ketchup glaze (I love doing ketchup with cumin or cayenne)
 
Hobo dinner (google if unfamiliar). Basically peppers, onion, potato, and whatever else you want, thrown together with a hamburger patty and baked in tinfoil in the oven.

Another possibility with hamburger is always stuffed peppers.
