I love meals like that. One of my favorites is to take cherry tomatoes, mushrooms, and roughly chopped onions and toss them in Italian dressing. Put them in a baking pan along with chicken breasts coated in Italian seasoned bread crumbs and bake at about 425°F for about 30-40 minutes.

Sheet pan dinners are great. We do something similar with gnocchi, onions, peppers, butternut squash, a touch of rosemary and Italian sausage. Just before removing from the oven, we’ll turn on the broiler for a minute to just crisp up the edges a bit on the gnocchi and sausage pieces
I do one with sausages - Italian and Kielbasa, usually. Quartered potatoes and onions. Whole cloves of garlic, unpeeled. Seasoning and some olive oil.
bake for an hour at 400. The garlic becomes really sweet and squeezes right out of the skins.

I do one often with balsamic/honey marinaded chicken thighs and brussel sprouts, carrots and fingerling potatoes.
Nachos are king of sheet pan dinners.
I just realized that it's been at least a couple of years since I last had nachos. My mouth is watering like crazy.
