Ingredients
- 1 or 2 lbs chicken cut, rinsed
- 1 inch piece of unpeeled ginger
- 1 green onion roughly chopped
- 1 Tablespoon Chinese cooking wine (substitute with American Brandy or whiskey)
- [Optional - home made chicken stock, preferably unflavored or flavored with ginger]
- handful of Goji (also called wolfberry)
- 6-8 fresh or dried ****ake mushrooms
- 3 tablespoons Chinese cooking wine (substitute with American Brandy or whiskey)
- 1/2 - 1 teaspoon of salt
Method
- Place ginger, liquor, green onion and a pinch of salt into a deep pot, put in enough water to cover chicken by a depth of about 2 inches - but don't add chicken just yet. Bring to boil.
- When the water comes to a rolling boil, add chicken and bring back to the boil. Boil for one minute, skimming off scum from the top. Take pot off heat and let sit for another minute or two. Rinse chicken under cold running water and throw out all the liquid in pot together with the ginger etc.
- Put chicken back into the same (rinsed) pot and add ginger, goji, mushrooms, salt, liquor and enough water (or optional stock) to cover.
- Bring to a boil and keep at a steady rolling boil for 20 minutes. Add water (or stock) if needed.
- Let chicken rest in the liquid until ready to serve. If needed, bring back slowly to serving temp. Do not boil again.
- Serve with rice
